We love the staff here at Taveuni Palms They're the friendliest people in the world! so warm and always smiling always ready to assist you anytime... A few Nights ago we had Fish Kokonda as a starter during dinner it's more like a Fijian Version of Ceviche or the Kinilaw in Philippines... Now I was so surprised that our Villa Manager, Teila was the Chef parang nanay lang si lola mo, she's the one who taught me how to make Kokonda... It's very simple and here's the Recipe I will share to all of you!
600g white Fish (use fish with firm flesh)
1 cup lemon juice
1 and 1/4 cups of coconut cream
1/4 cup finely chopped onion
1 small chili finely chopped
salt
Marinate fish for two hours with lemon juice, strain and wash in cold water. Add in the marinated ingredients, salt and pepper to taste and a tsp of lemon juice for taste. Add the coconut cream..
Actually Teila has this kitchen secrets and this may look simple but she actually squizzed the coconut with lime leaf added tomatoes and spring onions to the coconut milk and kept it cold in the deep freezer.. so Excited to try it back home..
We also made some Roti for our Fish Taco with Papaya lime salsa
